Santenay BIO "En Charron" 2021

Our red Santenay, grown at the foot of the 12th century Romanesque church of St Jean de Narosse in Côte de Beaune, Côte d'Or, is made from the PINOT NOIR grape variety.

Tasting: The first nose presents spicy notes, then with aeration the wine opens up with notes of black fruits. In the mouth the wine seems closed, it opens slowly with notes of spices and black fruits, the mouth remains discreet at this stage. The style of the wine is not reminiscent of a 2021, time will help with aging and aromatic opening.

For tastings, remember to place the bottle at 20°C, 24 hours before tasting and to open it 1.5 hours in advance,

    • Aromas: very intense nose of stewed fruits (Damson plums, red fruits)
    • Style: concentrated mouth of full maturity, round, well-coated tannins, long and powerful finish
    • Serving temperature: 14 to 16°C
    • Aging: at least 5 years – up to 10 years
    • If served young, our advice is to decant it.
  • Gastronomy / Sommelier's advice

    • On l’associera avec les plats mitonnés comme le veau et le bœuf braisé, que ses tanins vont structurer en bouche sans agression.
    •  Les volailles laquées et caramélisées à l’asiatique ainsi que les amateurs de hamburgers faits maison se feront une joie de l’accueillir à table pour sa texture charnue.
       
    •  Il sera à son aise en compagnie de paupiettes de volaille, un coq au vin, des œufs en meurette, les grillades, des côtelettes d’agneau grillées, du chou farci, des travers de porc aux lentilles.
       
    •  Il vous étonnera avec un filet de veau au curry doux, un gigot d’agneau, un Parmentier de canard, des cailles au miel et aux cerises ou un émincé de magret de canard aux cerises griottes.
       
    •  Côté fromage, choisissez-lui des pâtes souples et crémeuses : brie, camembert, brillat-savarin, soumaintrain frais...
